Mustard Chicken

My grandma surprised me with this dish like five years ago. I remember that when I tried it i was totally surprised as I thought she made her regular chicken. Anyway, my mom asked me today what did I want to eat and I answered this. She loves the chicken too, so there was no problem in making it. It's pretty simple and easy! Besides, it's healthy.

Ingredients:
- 1 chicken
- Salt and Pepper to taste. (or 1 Tb salt, 1 Tb pepper).
-The juice of two oranges.
-2 Tbs mustard.

Directions:

- You mix all the ingredients in a bowl with the chicken. Try to get dirty and put the mustard everywhere you can in the chicken.


Then, you wrap it with tinfoil and heat up the oven. Once it's hot, you put it in there for 1 and a half hours.



And, bam! The miracle chicken is ready! :D


So, it's really hard to go to somebody's house in Ecuador and not find rice. Rice is like everything here. You don't have anything to eat? Don't worry, then make some rice and frie an egg. Yes, that's what most people do when they are lazy on a sunday. I know people that have rice with breakfast, with lunch and dinner! That is why I decided to make a post about how to make Ecuadorian rice, or the way my mom makes it.

She makes it in the Rice cooker, so I'm just going to explain what she ads in there:

- Fill up the rice cooker with water until the second line (or two cups of water)
- 2 cups rice.
- 1/2 tsp oil. (we use sunflower oil)
- 1 garlic clove, minced.
- 1/2 large onion.


This is how it looks like. Then, cook it.

My mom is the best cook I know. Well, first, let me tell you how all my family lives in Ecuador and in here, cooking is a big deal, or it was a big deal. My grandmother still does recipes that take a long time to cook (is a day ok?) and my mom has my grandmother's singular taste, but with less fat involved in the process. I've always wondered why my mom isn't a chef. She's wondered that herself. I've always dreamt that my mom and me together have a coffee shop or a restaurant, but that isn't quite possible. Anyway, as that is not possible and people can not taste her yummy meals, I was wondering if I could start posting her recipes. And I think that's what I will do, starting tomorrow or the day after tomorrow. In the process, I'll learn how to cook too (I do know how to cook, it's just that lately I've only been cooking vegetarian stuff). I'll try to document everything in pictures and I'll upload everything I can so the recipes turn out to be as good as my mom makes them. The reason why I'm doing this blog in english, is because I think it's easier to share it this way. I'll make a blog in spanish too.
